Activity description :

Anthony offers you a complete workshop and will introduce you to the world of dairying and cheese-making! Depending on the season, you'll have the opportunity to work with sheep's, buffalo or cow's milk from local farms in the Occitanie region. The curd you'll produce is a specialty mainly enjoyed in Aveyron and the Basque Country, two regions renowned for their ewe farming.

Workshop schedule (3h):

  • Theoretical presentation to give you a better understanding of the various stages involved in making dairy products.
  • After receiving instructions and instructions for safe access to Anthony's dairy workshop, you'll begin the workshop by draining your fromage frais and renneting the curds, which you'll flavor to your taste.
  • Next, you'll churn your sheep's cream into butter.
  • Once the fresh cheese has been carefully drained, you can salt and flavour it according to your preferences and the ingredients available. You can also select the mold of your choice!
  • You can then enjoy your creations, along with other delights from the dairy's urban production, accompanied by a choice of wine or fruit juice to match.
  • At the end of the workshop, you'll leave with 150g of butter, 500g of cheese to mature and 500g of mild curd.

Know before you go

  • The workshop takes place on production premises, where hygiene is paramount. That's why you'll be provided with an apron, overshoes and a cap to ensure optimal sanitary conditions.
  • At the end of the workshop, you'll take away the delicious products you've created. So please bring one or two containers to take your creations home with you.
  • This workshop requires a minimum of 5 participants. Once confirmed, the workshop may be postponed if the number of participants is insufficient. In this case, an alternative will be proposed.
