Take advantage of a superb workshop to make your own artisanal tommes and ricottas from the milk of sheep, buffalo or Occitan cows! This workshop is an exceptional opportunity to explore an original urban dairy and delve into the fascinating world of cheese.

Course of the workshop (2h):

• You'll start immediately with the crucial step of renneting the milk, the real keystone of cheese-making.
• While the milk evolves through the coagulation process, Anthony, a cheese enthusiast, will introduce you to the subtleties and methods of creating the main cheese categories (lactic, soft, pressed, as well as butter-making).
• After molding the tomme, you'll embark on the preparation of the brousse, also famous under its Italian name: Ricotta.
• When the ricotta begins to "brousser", you'll need to mold it and make sure your tomme is well drained. While you're at it, enjoy a tasting of local produce with a wine or fruit juice pairing.
• At the end of your workshop, you'll leave with a 500g tomme and around 80g of ricotta.
