How does a champagne tasting work?

Most of the time, you'll be welcomed by the owner of the estate. He or she will take you on a tour of the estate, give you all the information you need about the champagne-making process, and then move on to the tasting stage.

With his advice, you'll learn to differentiate between grape varieties and to savor the subtle flavor notes present in champagne. You can conclude your visit with the purchase of a few bottles of champagne, to enjoy at home with your friends.

How to taste champagne

Follow these rules to enjoy champagne in the best possible conditions:

  • Serve chilled, but not cold. The temperature should be between 8 and 10 degrees to bring out the champagne's aromas and nuances.
  • Choose the right glass. It's best to serve champagne in a tulip-shaped flute to keep the aromas intact.
  • Open it delicately, without making a big "pop" but rather a slight "pshit" to prevent it from foaming too much.
  • Serve the champagne in perfectly clean glasses, hand-washed in very hot water and perfectly dried.
  • Finally, fill the glass in two stages, a few seconds apart, and only two-thirds full.

Use the right terms to describe champagne

All your senses are engaged when you taste champagne. In fact, the famous "pop" when you open the glass gives you a great deal of information about the champagne: the effervescence of the bubbles, how slow they are, the foam produced, etc.

Then comes the visual stage. We can observe the color of the robe: it can be straw yellow, golden or amber. The bubbles also play their part: if they are fine and form a string called a "pearl necklace", this is the sign of a very good vintage.

The sense of smell alsogives many indications about champagne. Fruity, flowery, woody or spicy notes appear at first, and as you swirl the glass, you'll discover secondary aromas.

Finally, when tasting, hold the champagne in your mouth for a few seconds to perceive all the notes. You may smell citrus, red fruit or toast. Every palate is different; the important thing is to enjoy the moment!

You'll learn all about the champagne-making process. The tour ends with a tasting of champagne from Maison Pierre Pinard and Rastafia champenois (the local brandy).

Wine and food pairing at Châtillon-sur-Marne

Take a tour of Maison Roland Philippe père et fils. This 1952 winery is located on the heights of Châtillon-sur-Marne, with breathtaking views over the entire valley. After listening carefully to your host's explanations, you'll take your seat for the wine tasting.

Champagne Blanc de Blancs will accompany your aperitifs and seafood dishes, then the vintage Cuvée made from Chardonnay, Pinot Noir and Pinot Meunier will be served for your main course. Finish with the house special Cuvée for dessert. A convivial moment to share with friends and family.

For over 6 generations, this champagne house has been producing some of the finest wines in the region. Your host will take you on a tour of the estate and its press, winery, cellar and wine cellar.
